Expanding or puffing is subjecting grain to hot steam under high pressure without the addition of chemicals. Whole cereal grains are used for puffing, hence the expanded products retain most of the valuable nutrients contained in the grain. Thanks to the puffing process, the product has an attractive light yellow color.

Balsamic vinegar of Modena IGP is a typical sweet-and-sour condiment, specifica of Emilia Romagna Region and holding the Protected Geographic Indication European LOGO (IGP/PGI). Balsamic Vinegar of Modena is obtained from the fermentation, acidifying and aging of Grape juice (Must). The aging should take place in wood barrels for at leat 60 days to obtain the IGP/PGI certification and acidity should be minimum 6%. It is possible to add Caramel as a colouring agent but all the REALE products are Colouring-free. In fact, we use natural aging in wood barrels and do not use any additive or preservative. We offer also aged and creamy Balsamic vinegars because when Balsamic is aged it becomes creamy and thick. Therefore, a young balsamic is used to dress salads while an older balsamic can be used on fruit and desserts as well.

The story of Nubia tells that "agghia pistata", the basic ingredient of Pesto alla Trapanese, made with fresh and raw ingredients, comes from the inhabitants of Genoa who, returning from the Far East with their ships, docked at the port of Trapani. The people of Trapani added what Sicily offered (almonds, tomatoes, basil and extra virgin olive oil) to season the Busiate (the pasta shape that best matches Trapani pesto), whose flavors and colors are as strong as they are powerful and colorful the Sicily and its people. It is a dish strongly linked to the territory and its population, a symbol of an identity that, like a flag, flies over the history of this ancient territory, considered one of the most beautiful in the world with mills, salt pans, beams, towers, ports, a mix of cultures, religions, knowledge, and flavors, which have always coexisted. The harvest is always done at night when temperatures are lower. Controlled maceration times, temperature and the use of wine fermenting tanks allows us to find the perfect balance of colour and tannins development. Flowers and fruit aromas are an important touch in the taste. Fermentations is performed at different temperatures, at the discretion of our technicians. The exact technique depends on the weather, the grapes used and our objective.The wine has a shocking-palate with balsamic and roasted aftertaste, developed in conjunction with floral notes.

Familia Comenge pays tribute to the great ageing wines of the Ribera del Duero region. If the Tempranillo variety of this vineyard, Pago de los Ismas, is characterised by anything at all, it is its excellent capacity for ageing. The vineyard was planted in 1982, coinciding with the creation of the Ribera del Duero Designation of Origin. Its excellent location, a steep slope of clay and calcareous soil affords excellent ripening and quality for the grapes each year.
After 25 months in new and one-year-old barrels of French oak, the wine achieves its delicious texture, intensity, elegance and persistence. Tasting notes: Medium-high depth, black cherry in the glass with garnet highlights, bright and very clean. Intense and spicy on the nose. Prominence of liquorice, ripe red fruit, fennel, aromatic herbs and balsamic sensations.
The bouquet of this Tempranillo leaves hardly any room for hints of spices from the oak, caramel, vanilla, cocoa... The mouth is gentle and big, but not opulent, showing the great quality of its very fine and sweet tannins at all times. The nose is somewhat less fruity and more spicy; we again come across the ripe red fruit, but also vanilla, caramel, scrubland herbs and liquorice, adding complexity to the wine overall. The aftertaste is very long and silky, leaving a fresh sensation that makes the wine easy to drink.

The Grani Antichi Donna Itriya line is made from a blend of Russello and Perciasacchi grains from organic farming. The wheat has found in the island the environmental conditions to thrive in over fifty specific local varieties. The lower gluten content in ancient Sicilian grains makes all the products derived from them lighter, more digestible, and easier to assimilate, with a lower likelihood of developing increasingly common intolerances, probably due to excessive consumption of modern wheat. Ancient grains, precisely because they are indigenous, are very resilient and grow spontaneously without the excessive use of fertilizers and pesticides.
