The quality of extra virgin olive oil is determined by, the agricultural land, the healthy olive, immediate grinding of the olive once it is picked, cold manufacturing, appropriate storage.
The organoleptic value (those properties that can be perceived by our senses) decreases the longer, the product remains in its packaging. Thus, we recommend that the olive oil is consumed as soon as possible.
Isul is packaged without filtering to prevent wastage of its taste and smell characteristics, so small olive particles may appear in the bottom of the bottle.
Keep in a dark, dry place away from strong smells. In cold environments the oil may solidify, but its liquid state is recovered upon an increase in temperature.

In Marina di Ragusa, in our farm, only the best varieties of Sicilian olive trees are grown: Tonda Iblea, Nocellara dell'Etna (local ecotype called Verdese), and Biancolilla; the secular trees are flanked by young plants created with innovative agronomic criteria and the use of agro-climatic and environmental monitoring systems. Furthermore, in the neighboring experimental areas, a varietal collection of over 40 varieties of olive trees from all the countries of the Mediterranean basin allows evaluating the response to the local climate of different genotypes, representing precious know-how for future plants. The production of olives destined for transformation into oil derives from a plant grown without the use of chemical fertilizers and pesticides with the most advanced agronomic techniques. The olive harvest is done by hand, without the aid of mechanical equipment and their processing takes place on the same day as the harvest. The milling and pressing of the olives are carried out with a continuous cycle system at low temperatures, the decanting takes place naturally in steel containers under nitrogen pressure and the bottling takes place at the Frantoio Mediterraneo located in Donnalucata, a few kilometers from the company that guarantees compliance with HACCP and international standards. It is a production of excellence, available in limited quantities.
